Basic Chicken Soup



2 cans chicken broth
1 large can whole or chopped tomatoes
1 can no-sugar-added green beans
1/2 stalk chopped celery with leaves
1 large yellow onion, quartered
1/2 tsp black pepper
1/8 tsp white pepper
1/4 tsp basil

Pour all ingredients into a saucepan and set over medium heat. Bring to a boil, then turn to medium low, cover, and cook for 30 mintues. You can add chunks of cooked chicken, beef or ham to make a heartier soup or a dish sufficient for an entire meal. If you like a spicier soup, substitute (or add) a can of Rotel tomatoes. To put a little extra flaver in clear broths, add some finely chopped green onions, including the tops, or even small bits of chicken, steak, or other meat. Interestingly enough, the broth and bouillon cubes are made mainly from salt, corn syrup, sugar and chicken or beef. Homemade broths boiled from chicken, beef, or fish bones are the only ones we have seen without added sugar. Of course, unless you are diabetic, the amount of added sugar in a bouillon cube probably won't hurt you. Serves 6
